When I think sumertime and picnics I think of this potato salad. A BBQ or potluck just isn’t complete without a bowl of this salad. Even my 4-year old who says she hates potatoes will eat this potato salad by the spoonful.
I often use a bag of frozen shredded potatoes for this recipe. All I do is heat them in the microwave for a short time until they are thawed and also softened slightly. When I use regular potatoes, I have found this Salad Shooter is the perfect way to shred them after they are cooked and peeled.
Shredded Potato Salad
2 lbs. potatoes, cooked and shredded
1 small onion, chopped
2 cups celery, chopped
Dressing:
1 ½ cups Miracle Whip dressing
1 ½ tsp. mustard
¾ cup white sugar
2 tsp. salt
1/8 cup vinegar
¼ cup milk
Combine potatoes, celery, onion in a large bowl. Combine the dressing ingredients, mixing well. Then mix the dressing with the potatoes. Chill and serve.
