This Zucchini recipe is one that even my kids will eat. In fact this dish is so yummy the kids don’t even realize they are eating a vegetable.
Zucchini Casserole
4-5 zucchini sliced
¾ cup grated carrots
½ cup chopped onions
¾ cup sour cream
6 Tablespoons butter
1 can cream of chicken
Box herb croutons
Pinch of poultry seasoning
Sauté carrots & onions in butter add zucchini, sour cream and soup. Mix in croutons saving a few for the top. Bake at 350° til bubbly around edges.
