Baked Corn is by far one of my favorite side dishes. My mom has been making this recipe for years. A holiday just isn’t complete with out this simple but yummy corn dish. Regardless of when she served this dish, it was always scraped clean.
This recipe is so easy to mix up that by the time I was probably around 12-years old I could make this dish on my own. Really all you do is throw all the ingredients in the blender and blend before placing in the oven. While my own kids are not old enough to make this dish, they sure do enjoy eating it.
I freeze my own sweet corn in the summer and then use it recipes like this. While it is a lot of work to get ready for the freezer it is so much tastier than frozen or canned corn at the store.
- 2 eggs
- 1 teaspoon salt
- 1 Tablespoon sugar
- 1 Tablespoon flour
- 2 cup grated corn
- ⅛ teaspoon pepper
- 2 Tablespoons butter
- 1 cup milk
- In a blender, add all the ingredients and blend until mixed.
- Bake at 350° for 60 minutes or until golden brown.
