When I did my last freezer cooking day I made these Crockpot Chicken Fajitas and they are definitely a hit here. The meat is so soft after cooking in the crockpot all day and it has lots of flavor too. All I have to do tonight is pull a bag of the meat out of the freezer and heat it and prepare the toppings. Having meals in the freezer makes busy days so much easier and also cuts down on the times I call the pizza place right up the road and order dinner in. What are you having for dinner?
Crockpot Chicken Fajitas
6 whole chicken breasts
2 ¼ ounces taco seasoning package
1 ½ jar salsa, 8 ounce jar
1 ½ whole medium sized onion peeled and sliced
3 whole bell peppers any color chunked up
Place chicken in a single layer on the bottom of the crock pot. Sprinkle taco seasoning over the chicken and then pour the jar of salsa over it. On top of the chicken spread out the onion and peppers. Cover and cook on low for 6 hours. Take 2 forks and shred the chicken before serving. Serve with your favorite tortillas and toppings.
