Yesterday on Facebook I posted a picture of lots of empty jars and ask my fans to guess what I was going to be doing today. I got a lot of great guesses including everything from moonshining to canning applesauce.
Well the guesses about canning where correct, as I did use all those jars for canning. We had 100 pounds of chicken that we cut up and stuffed into jars and canned. It is fine with me if I don’t see any more chicken for a very, very long time.
I had never canned chicken before but heard so much about how tender the canned meat is and also how handy it is to have on hand. Thankfully, I have some wonderful friends who left me come over to their pressure canner meat canning party and they showed me how it is done. So no, nowhere near 100 pounds of the chicken was for me.
I see a lot of chicken dishes coming up for dinners in the next few months. What is your favorite chicken recipe?
